This is such a fantastic recipe. These little beauties take such little effort and work well for me every time. They always look great and taste fab too. Ideal for one of those moments when you need a chocolate fix or you have to come up a sumptuous, easy Birthday treat!
Ingredients:
110g self raising flour
15g cocoa powder
125g butter (softened)
125g caster sugar
2 eggs
2 tbsp milk
Icing:
100g butter (softened)
80g icing sugar
20g cocoa powder
Method:
Preheat the oven to 400F. Line a 12 bun cup cake tin with paper cases Place the flour, cocoa, butter, sugar and eggs into the food processor and blend. Adding the milk once all the other ingredients are well combined. Spoon into the paper cases. Bake for 20 - 25 minutes or until an inserted skewer comes out clean. Cool on a wired rack.
While cupcakes are cooling, beat icing sugar, butter and cocoa powder until light and fluffy, place in icing bag with a star shaped nozzle. Pipe icing onto thoroughly cooled cupcakes, top with a strawberry or, a garnish of your choice. Enjoy!
