Strawberry love heart biscuits




Ahh Valentines, an excuse for us to go mad with our heart shaped cutters and put a bit of romance in our baking!

Ingredients:
75g soft butter
50g caster sugar
1 tbsp milk
1-2 drops of vanilla essence
35g full fat cream cheese
150g plain flour
pinch of baking powder
2 tbsp strawberry jam
1 egg and a drop of milk (for egg wash)

Method:
Beat butter and sugar until lighter in colour and fluffy. Beat in vanilla essence, milk and cream cheese. Sift in the flour and baking powder. Combine with your hands to make a firm dough. Shape into a thick disc, cover, and place in the fridge for 30 minutes.
Heat strawberry jam until runny, put aside and let cool. Preheat your oven to 350F/160C. Roll out the dough, (it should be no thicker than a coin) and cut into heart shapes. You should get 24 heart shapes with this recipe.
Place the half the biscuits on a lined tray. Brush the outer edge with egg wash, then top with another biscuit, which has had a smaller heart shape cut out of the centre. Press down lightly to seal. Add about 1/4 of a tsp to the centre of each heart (you just want enough to cover the centre, if you use too much it will boil out over the edges, less is more in this scenario!).
Bake in the oven for 15-20 minutes or until golden around the edges. Serve to the love of your life for a Valentines treat!

  3. Dorothy, I decided to make these for my 3 skiiers coming home on Valentine's Day but didn't have all the ingredients... So, I used marg instead of cream cheese and raspberry jam instead of strawberry! They worked wonderfully!
