Fruit tea cake


This fruit tea cake was also part of a hamper I made for an auction recently. It is delicious with a good spread of butter and a cup of hot tea. Yum!

Ingredients:

150ml Strong hot black tea
75g prunes (chopped)
150g sultanas
125g raisins
150g dark brown sugar
2 eggs
225g self raising flour
1tsp ground cinnamon
1tsp ground nutmeg

Method:

Soak prunes, raisins and sultanas in hot tea for an hour. Preheat oven to 380F. Beat sugar and eggs until creamy. Sift in flour and spices. Add soaked fruit and any leftover tea fold in. Spoon into a lined 2lb loaf tin. Bake for 1 hour or until a skewer inserted comes out clean.

This recipe is adaptable in many ways. Swap black tea with green tea for example or use different dried fruits. Just keep the overall weight for the fruit the same. ;o)
