Drop scones with Smoked Salmon and Sour Cream



These Drop Scones are a favourite of mine and are produced at least once a month as a weekend treat. They are equally as Sumptuous with Fried Bacon and a drizzle of Maple syrup. What I love about them is that not only are they delish, but they only take a matter of minutes to throw together. Give them a try, and let me know what you think!


Drop Scones:

100g Self Raising Flour
1tsp Baking Powder
25g Caster Sugar
Pinch of Salt
1 Egg
125ml Milk
2-3 tbsp Oil (for Frying)

Combine all dry ingredients in a bowl. Whisk egg with milk. Add to dry ingredients and whisk until smooth. Heat Vegetable Oil / Olive Oil (Vegetable Oil will make them crispier) in a large pan. Add large spoonfulls of batter to the pan, leaving room for them to expand, and also to get in around them for turning. Then reduce the heat and fry till golden and crispy on both sides. It is best to make this batter just before your ready to use it as the baking powder begins to react immediately. If it's left your drop scones will not rise as well. Enjoy! ;0)

  3. You know, I've made these a few times since we had them at your place, lathered in maple syrup and bacon (makes me shudder to think about it again...) and the first time wasn't so successful. They turned out a bit flat, and well....boring. But then I realised that the trick to that super fluffy, puffyness, is in the whisking, which really needs to be good and vigorous for a minute or two. That's what makes the batter nice and thick, and ultimately ends up in a mouthwateringly fluffy pancake. Ooops, sorry, drop scone ;) So anyone who wants to try this - it's all in the whisk!

    This is a new favourite in my house!
