Digestive biscuits
This is the first time I've made these. They are very easy and quick to make. I found them slightly different to the traditional ones, but delicious non the less.
Ingredients:
100g wholewheat flour
100g medium oatmeal
50g soft brown sugar
1 tsp baking powder
pinch salt
100g butter
Method:
Combine all the dry ingredients. Rub in the butter. As the butter is rubbed in the mixture will come together a dough. Place in the fridge for 15 minutes. Pre heat your oven to 350F. Roll out the dough between two pieces of cling flim. Cut out biscuis with a round cutter and place on a large, lined baking tray.Re roll any trimmings. Place in the oven for 15-20 minutes or until the edges start to turn a golden brown. Leave to cool for 5 minutes on the tray, then transfere to a wire rack to complete cooling. The biscuits will keep in an airtight container for up to 3 days!
