Violet melting moments





Melting moments are such an easy biscuit to make, and they're so delicious. Ever since I was presented with a bottle of violet syrup from my sister Martha (best present ever, Marty Thanks! x) I've been dying to try it out and thought this would be a good combo. Turns out I was right, yum, yum!

Ingredients:
175g butter (softened)
40g icing sugar
150g plain flour
25g cornflour
few drops vanilla essence

50g butter (softened)
50g icing sugar
2 tsp violet syrup (Moulin de valdonne)
2 drops violet colouring gel

Method:
Preheat the oven to 320F. Beat the butter and icing sugar until pale and creamy. Add vanilla essence. Sift in flour and cornflour and mix thoroughly. If the mixture is too stiff add a drop of milk to loosen it! Place in a piping bag, with a starshaped nozzle and pipe onto a large lined baking sheet. You should get 24 biscuits. Bake for 15-20 minutes until the base just starts to turn golden. Leave to cool an the tray for 5 minutes then move to a wire rack to finish cooling completely.

Beat the butter, sugar, syrup and colouring to a smooth thick icing. Pipe onto the base of a biscuit, then sandwich with another. Enjoy! :-P
