Limoncello



I absolutely love Limoncello, so when I discovered this easy peasy recipe, I thought I'd give it a bash. This is best served out of the fridge or freezer, or even better still off an ice cold deck!!!

Ingredients:
5 lemons
1 litre of vodka
450g sugar
450ml water (previously boiled and cooled or bottled)

Method:
Zest the lemons (making sure not to include the bitter white pith). Place in a large jar with the vodka and store in a light place for 7 to 10 days (obviously the longer the better, but if you can not hold out the whole 10 days, 7 will be adequate!). Give the jar a light shake occasionally.





At the end of the 10 days place the sugar and water in a thick bottomed saucepan and bring to the boil, slowly stirring every now and again. boil for 15 minutes, then cool. Strain the vodka and lemon mixture through a fine muslin into the sugar syrup. Stir well, then pour into sterilised bottles. Seal and store in a dark place for two weeks before serving. The Limoncello will keep for up to one year.
