Banana, hazelnut and toffee muffins



This is a handy recipe for when you have over ripe Bananas. The following recipe makes 6 muffins.

Ingredients:
4oz plain flour
Pinch of salt
1 tsp baking powder
1/2 tsp ground cinnamon
2oz sugar
1 egg
2oz olive oil
2 oz chopped hazelnuts
2 med bananas (mashed)
Few drops of vanilla essence
Dulce de leche 

Method:
Preheat your oven to 350F. Sift all the dry ingredients. Add sugar. In a separate bowl lightly mix the oil, essence and eggs (do not over mix as it will start to thicken). Fold in the dry ingredients, nuts and mashed banana. Spoon into a Muffin tray, lined with paper cups. Bake for 30 or until a skewer inserted comes out clean. When thoroughly cooled, cover with a thick layer of Dulce de leche and top with half a hazelnut. Enjoy!
