Melting Moments



These are defiantly one for the weekend. They are so light, crumbly and melt in the mouth (as the name suggests!) it's difficult to stop once you've started!!!

Melting Moments
175g Butter
40g Icing Sugar
150g Plain Flour
25g Corn Flour
Few drops of Vanilla Essence

Preheat oven to 320 F / 160 C. Beat Butter and Icing Sugar until light and fluffy. Beat in Vanilla Essence. Sift in Flour and Corn Flour. Mix thoroughly, using a drop of milk if necessary. Put the mixture in a piping bag with a star shaped nozzle. Pipe rounds onto a lined Baking sheet. Bake for 15-20 minutes (you do not want them to colour). 

Chocolate Butter Icing
50g Butter (softened)
40g Icing Sugar
10g Cocoa Powder

Raspberry Butter Icing
50g Butter (softened)
50g Icing Sugar
1 tsp Raspberry Jam

For the Chocolate Butter Icing combine all ingredients and whisk until light and fluffy. For the Raspberry, whisk the Butter and Icing Sugar till light and fluffy, then stir in Raspberry Jam. If you find the consistency of your Buttercream to loose or stiff you can add a little extra Icing Sugar or a few drops of milk to sort it out.
Sandwich the Cooled Melting Moments together with The Buttercream and Voila, a very tasty treat! :0)

  2. Totally, I've made them twice now and they've worked so well each time. Filled them with Strawberry Jam and a Custard Buttercream last time. Yum, yum!
